docs(readme): add programmatic evaluation section

Summary

• Adds a "Programmatic Evaluation (Headless Mode)" section to the README
• Documents how to run batch predictions without the UI using Session.load_model() and Session.evaluate_all_images()
• Includes a minimal working example and notes on required config fields

Addresses user requests for scripted/automated evaluation workflows.

Test plan

• Verified the documented example runs end-to-end with a freshly trained model
• Review README rendering on GitHub
