Purpose

Add streamlined Mac installation guide for running CWS using the prebuilt Docker image without requiring a build environment.

• M2_MAC_INSTALL.md - Concise Mac installation guide for Docker image deployment
• Colima support as lightweight Docker Desktop alternative
• Platform architecture explanation for Apple Silicon compatibility

Might we worth throwing in something about how to configure to use Apple Virtualization for ARM mac's because it is faster than the default QEMU.

@lcampos89 Can you update this to use or reference the docker compose that is already in the repo in docker/install/console-db-es-ls-kibana? And maybe link this to the README.md and maybe move this to the install/docker folder with a link to the README? Thanks!

I don't have an M5 Mac available to test on and update the install guide, so I think we can go ahead and close this PR without merging it into the cws repo.

The README.md under docker/install/console-db-es-ls-kibana works well. When I first started testing cws, I accidentally used the root-level README.md instead, which isn't as thorough. The one under docker/install/console-db-es-ls-kibana is the better reference.
