Podman support

Once https://github.com/mdelapenya/go-sdk-examples is finished and integrated into Testcontainers for Golang, it would be great to adopt it in development, demos and CI.

That matrix is not related to Testcontainers Go but for the https://github.com/docker/go-sdk. I've not started the migration yet, so it does not apply. But, I think TC libs do support Podman with some tweaks

You can also configure podman to listen to the docker port(s). There may be a little more to it than that so check for a shim package that handles everything.

In my experience it's good enough for most things. I remember one image and/or app failed but only because it had a non-API dependency on a docker file. I think this may have been a docker extension, actually, but since the image I needed relied on it I was stuck.
