Feature Request  Do not use $ delimiter for latex math in problem statement

To be consistent with PreTeXt we should use `$` to begin math and `$` to end math.  This will clear up some problems authors are having when they use $ in the 

If this is going to be a lot of work let me know, as it may not be worth it.
